What I Eat In A Day: Vegan Recipes

Today was an easy and lazy day of eating for me! And yet, the food was just as delicious and decadent as ever. ๐Ÿ™‚ ย Check out these quick and easy recipes I eat all the time!

Apple Spice Pancakes:

Yes. Autumn is almost upon us, so you bet your behind I am indulging my fall craze early in the kitchen!

Ingredients you will need:

For the toppings:

Chopped Apple

Cinnamon

Maple Syrup

Coconut Oil

For the pancakes:

Any kind of Pancake mix or regular flour

Baking POWDER

Protein Powder (optional)

Vanilla Extract

Any kind of plant milk

Maple Syrup

Directions:

I’m going to be honest here; I don’t follow a recipe. I completely eyeball everything until the pancake batter looks the way I want it to. Thick but not doughy. If you want thin pancakes add more milk, thicker use less milk. Don’t put in more than a tablespoon of baking powder. Less baking powder = thinner pancakes. Too much and it will just be weird, trust me. I don’t know the science here, but I make these almost every day lol.

For the topping: throw about a tablespoon of coconut oil into any pot or pan you have. Set the stove top to medium heat and add the maple syrup and cinnamon. Then mix it up and add the chopped apples. Mix it around and cook those bbs until they look and feel the way you like them!

Chickpeas and Veggie Stir Fry

Ingredients:

Romaine Lettuce

Broccoli

Red Cabbage

Chickpeas

Garlic Powder

Onion Powder

Paprika

Goddess Dressing

Olive Oil

Soy Sauce

Turmeric

Directions: Once again not much of a recipe but I’ll try.

Preheat your oven to 400 degrees Fahrenheit. Drain and rinse your chickpeas. Lay some parchment paper on a baking sheet and pour the chickpeas over the paper. Add as much seasoning as you’d like. Pop those suckers in the oven for 10-15 minutes.

For the stir fry: heat up a frying pan (or literally any other kind of stovetop cookware) on medium heat and drizzle on a little bit of olive oil, soy sauce, and Goddess Dressing. Add chopped up veggies and stir. Add any and all seasonings you’d like. Add the turmeric and stir some more. Cook until desired texture is reached.

Put chopped romaine in a bowl and add the stir fry and chickpeas. ENJOY.

Mix together coconut flour, almond butter, plant milk, maple syrup, protein powder, vanilla, and chocolate chips until it creates a firm dough. roll onto parchment paper let firm in fridge. Add caramel sauce and melted chocolate and indulge.
